Seafood Kebab

Serves 6

1 lb. shrimp
1 lb. sea scallops
Juice from 1 lemon
2 tbsp. olive oil
1 garlic clove, minced
2 tbsp chopped fresh cilantro

Peel & devein shrimp, leaving tail on. Rinse, pat dry shrimp & scallops with paper towel then place in glass bowl. Add remaining ingredients, toss well & marinate in refrigerator for at least 30 minutes.

When ready to cook, spray broiler pan, preheat broiler or grill. Alternate shrimp and scallops on skewers. Place under broiler or on grill for 3-4 minutes. Brush with marinade while cooking. Turn and continue cooking until shrimp and scallops are qpaque and slightly brown. (around 8 minutes)

Optional: Sprinkle with lemon zest or juice and cracked pepper. Serve

  • 1/2 cup Jello Pudding Sugar Free Fat Free
  • 1/2 cup Jello Gelatin Sugar Free (Strawberry or Cherry)
  • 2 Tsps Cool Whip Free
  • 2 or 3 Strawberries cut up (frozen or fresh)

Mix all ingredients and enjoy!! This recipe tastes better than it sounds. If you are in a rush and don’t want to make the jello pudding and gelatin, just pick up the individual conatiners at the grocery store pop the top, mix and enjoy!!
